I haven't tried that with VNC, but it is entirely possible with XDMCP. You'd lock the current desktop and then start a new desktop, using XDMCP to log into a remote computer.
One issue to keep in mind is that when you do get it working, anytime you vnc into the machine and start using it, there is no proper way to lock the console - so when you work remotely, someone at the console can see and interfere with your work.
