IMAPS does. Plain IMAP does not. Same with SMTP & SMTPS etc. Originally mail did not use encryption, but later SSL/TLS was added to encrypt between the user and server. It does not replace email encryption, such as X.509 or PGP/GPG when you want to keep something secret from all but the recipient.
But for the OP, er, ah AP, Gmail uses encryption by default these days.
