To all I know Postfix cannot do this for you. For a start it would have to evaluate the subject (or the body) of an e-mail. It doesn't. I don't know any MTA that does. But maybe you can define a hook for a script that will get executed for each e-mail that is handled by postfix. If your clients are Linux or Unix based, your users should use vacation instead.
