So far, I have updated a couple times this week and my wallpaper has quit defaulting back to " Safe Landing" after uninstalling those packages and locking them.
happy that you have ??solved?? your problem but I seriously doubt the solution is from uninstalling and locking out plasma5-theme-openSUSE and plasma5-defaults-openSUSE.
