How well tested would they be? As a case of unsupported/bleed-if-you- want? I would find that very useful, as long as it's easy to go back t stable baseline if it doesn't work out. In case of OpenOffice wouldn't it be more or less trivial to detach the OO release completely from the desktop/distro release? Unlike the desktop software without which a desktop computer doesn't go, neither OO nor the desktop depend on each other. One less upstream date to worry about.
