After running the system for a while, out of nowhere the system suddenly stops responding to anything and I need to do Alt+SysRq+reisub
The error started at 21:04 in the logs

It's obviously a problem of AMDGPU, either firmware or driver. The best would be to report to the upstream. Create a report on gitlab.freedesktop.org Issues.
