I haven't installed or tried out Plasma 5 personally, but from what I understand from the Visual Design Group blogs some months ago, there should be some kind of 'meta-themes' category in the System Settings, in which all types of themeing elements can be switched in one go. So I'm quite sure somebody will create a meta-theme you can grab via Get Hot New Stuff which will return a more classic look.
