Well, there's a reason why they are called "Unstable"... Regarding the lang packages: The unstable packages pull the sources directly from upstream git. KDE maintains the translations separately though (there are no translations in the git repos), they are only merged with the sources when a release is made. So there are no translations for the unstable packages. And the lang packages do require the exact same version of the corresponding application, so that's why you cannot keep the stable ones installed (unless you break the dependencies).
