since today (on TW), when I compose new mail (answering to plain text mails is alright), KMail has started to compose mail in HTML. I have found this too. It seems a recent problem. I have a a Rich Text button on my toolbar when composing and it is highlighted so it defaults to "on", just click it off.

Go to configure kmail -> composer You will see an unchecked box Reply or forward using HTML if present
Check it, click apply, uncheck it, apply and now enjoy again plain text message
