I don't have that problem. By default, you should have a close button but you can get the minimize and maximize buttons back by installing and using gnome-tweak-tool. It sounds like your windows borders are missing, perhaps you didn't get everything you needed from the repo, or some let over user settings that you have are messing things up. How does your installed experience compare to the live images?
There are no separate workspaces/desktops: everything is always on the one workspace - even though I am allowed to create my (usual 6 individual workspaces).
In Gnome3, workspaces are created on the fly. Simply hit the activities button drag the desired window to either the desired workspace on the right. Dragging to the empty workspace creates another empty one below. http://paste.opensuse.org/61952862

I am extremely happy with Gnome 3, I think my non-technical wife will be happy with it once I install it for her. I'll do that once it's available in a stable repo.
