Since FFMPEG 5 in the repository has been stable for several months, I was wondering if there are any plans in the near future to build against this?

Right, someone needs to edit openSUSE:Factory's prjconf for that and switch the Prefer line.

Right - and before THAT happens, someone/some-many will need to fix their packages to actually build with ffmpeg 5 as default. There is a non-representative build state overview available at https://build.opensuse.org/project/show/home:dimstar:ffmpeg5 Cheers, Dominique
VLC has disabled vaapi for ffmpeg5 by removing it's header. https://code.videolan.org/videolan/vlc/-/issues/26772 :(
