You could combine rsync with a snapper configuration for the external disk. Call "snapper create ..." after every rsync run, and you are done. Assuming your external disk has a VolumeLabel as "BienersBtrfsBackup" and would mount to /mounts/BienersBtrfsBackup, you would do:
