At work we rent dedicated servers and we use Dropbear which is basically a lightweight SSH server to be able to decrypt them remotely. Basically when a server boots it first boots into Dropbear, you SSH into it with your SSH key, enter a command with the LUKS passphrase, the partitions are unlocked and the regular OS continues to boot.
