Well, if that bothered me that much, I would create a script that would do those modifications. Using 'sed' you can edit a text file and add your own settings. You just need to copy that script to the installed machine and run it to customize to your liking.
Edit the configs, remove unwanted packages, mark them taboo, whatever.
