I'd keep them to support digital video camcorders out of the box.

privoxy Very useful, but if it isn't configured by default, only those who know about it will install. And as it is an internet tool, shouldn't be an issue to download from the net.
timidity Needed for MIDI on many hardware.
xine-ui I still use it many times instead of the KDE frontends...
