Since this week this does no longer work. And in addition the disappearing also happens a lot more often and even without docking/undocking the laptop. - happened after "waking up" the laptop with an existing session - happened after a reboot after logging into a new session
I have temporarily moved away ~/.config/plasma-org.kde.plasma.desktop-appletsrc and this seems to at least let me restart the plasmashell and get a panel back.
However, I had to move away the file again today. I had made some customizations, but apparently they still caused the disappearing again today.
I'll keep the default settings for now to see if the issue appears again.
Anyone else having those issues?
