Since we use framebuffer during installation, i.e. fbdev X driver, it depends on your Video card's BIOS which resolutions are supported. Apparently your video card's BIOS does not support 1920x1080. Switching to native driver already during installation would make already the installation on a bunch of machines *impossible*. Temporarily using installations with broken native drivers via failsafe boot option (switching to vesa/fbdev driver) wouldn't work either. Investigating and fixing bugs in native drivers also couldn't be done. I know other distributors use the native driver already during installation. I don't know how they adress issues in native drivers ...
