Notice, this is only a *display* setting, like Thunderbird does (I'm told). The actual mails delivered will have your full name and address.
In Thunderbird, you can deselect this. The point where to do this is not obvious, but it exists :). The default is not to show the mail address, but the "real world Name" associated with this address in your addressbook. Or, if the address is one of the addresses you use for yourself, it becomes "Me". This can be annoying, and it can be a security risk, because it is easy to fake the display name. If the sender is given as "Good Guy <someone@spammer.net>" in the Mail, you only see "Good Guy" (since someone@spammer.net is not in your addressbook)... --
