Argh.
Looking at the default for GNOME Power Manager AC settings, if a timeout is set, it will suspend. This is most likely an oversight and I'll pursue this to get it fixed.
Thank you! While I agree that hibernating and powering off a computer that is doing nothing is generally a good idea, giving users that power of decision is not a good idea. It must be root who decides the policy, whatever it is: hibernate when idle, never hibernate, let user choose... whatever. Root must be king, regardless of what desktop the users use. It gave me quite a fright: I thought it had crashed or something.
