You're right that dropping an entry to the desktop directly doesn't work at the moment. Sorry, I didn't notice this.
But Plasma's definition of a "Desktop" has not changed at all. It's exactly the same actually: the default "Desktop" is basically just empty space where you can put plasmoids, like the folderview, a comic, or "Icons".
If you want to have an icon on the desktop, add an "Icon" plasmoid.
It's just that the automatism that creates an "Icon" when you drop a menu entry doesn't seem to work at the moment. A bug report has been filed: https://bugs.kde.org/show_bug.cgi?id=346867
I guess its early days, it looks like i'll have to keep using Kicker as the Plasma Application Launcher is still in early development stages.
??? Actually Kickoff is older than Kicker. It was already there in (openSUSE's) KDE3. It's definitely not in "early development stages"...
But recently a new feature has been added as indicated: the right-click menu should now show the documents you opened with that application. Apparently those "Add to Desktop/Panel" contect menu entries got lost while adding that. This is already reported btw: https://bugs.kde.org/show_bug.cgi?id=334722
