I think I've got the path issue understood now.

Umm, no. $PATH is an exported shell variable that is in no way related to the kernel whatsoever. Of course one can edit $PATH, i.e. export $PATH:/usr/local/bin/bin
su - on the other hand executes /root/.profile
Yes, and more importantly "su -" creates a login shell which changes your effective UID/GID. "su" on its own like that does not and hence $PATH is not affected.
