All you'd have to do is remove (comment) out the definition in /etc/cups/printer.conf and /etc/printers.conf.
Although I have to ask, why? :)
Becuase kids are going to be using computers in different rooms all over the school during the day so they are never going to near the same printer. If they have a default printer then they are never going to think for themselves and decide which printer to use it can also be used as a way to misbehave. There are probably more reason why it would be good to remove the default printer.
