Possibly: Bootable CD with Network Installation such as openSUSE 11.2 has Add-on CD to use with openSUSE 11.2 Network Installation Instructions for using openSUSE live CD to install Li-f-e from USB stick (or network), if it is possible to do this.
Process would be same as installing standard 11.2 then adding Education repository and selecting all the Edu applications you need. Live DVDs do not have rpm packages so cannot be used as standard installation source.
