I'm using Blackhole (http:/the.groovy.org) to filter about 4 emails per second on an LEA mail system, using qmail (http://cr.yp.to/qmail.html) as the MTA. The ucspi-tcp program (http://cr.yp.to/ucspi-tcp) which handles the tcp connections for qmail comes with a program called recordio which can log all tcp traffic for the mail server. You can keep these logs as long as you like and you capture all the emails along with the smtp commands etc. so you know exactly what people have been trying to do to your mailserver.
