Because grub save that splash screen can be found at first booting disk, but when you attach your usb disk, then bios get this disk at first place and cannot find splash screen. So you can have this screen with usb or without, but this cannot be handled by one configuration. gfxmenu (hd0,0)/boot/message can be changed to gfxmenu (hd1,0)/boot/message So only sollution is some trick in bios to attach usb after your harddisk.
