Changing setting via context menu corrects the behavior but only for a couple off hour. What is the setting for intl.locale.matchOS (about:config)?
What is the environment for echo $LANG echo $LANGUAGE ?

Please observe what happens to the preference: spellchecker.dictionary when - you change it to the correct spellchecking language - when it's automatically back to something else
Firefox is saving the spellcheck language per URL. Does the setting change for you silently for the same location or is it always for different urls?
The logic how the used dictionary is calculated is not very obvious for me.

about:config -> spellchecker.dictionary in cases when it behaves correctly and also after it jumped back
