How repeatable is this? Can you run tcpdump -s 0 -w /tmp/tcpdump host SERVER-NAME on the client, and a matching command on the server, and get a manageable trace when the problem occurs? Can you try rsize=8192,wsize=8192 or even rsize=1024,wsize=1024.
