Because there is no other driver listed at http://www.openprinting.org/printer/Epson/Epson-XP-800_Series I assume the Epson XP-800 is not supported by a free driver. According to what I wrote in the above comment#3 it seems the Epson XP-800 is not supported by a free driver which means there cannot be a printer driver provided by openSUSE which means the Epson XP-800 cannot be listed in printer setup tools out of the box in openSUSE. But when you download and install non-free printer driver software that is made in compliance how printer setup works with CUPS, then those printers that are supported by that driver software will also be listed in printer setup tools.
