Arguably, the average desktop user doesn't know about /var/log/messages, but we're not going to stop shipping syslog-ng. sendmail/postfix can also be used by programs like bug-buddy to email bug reports to bug tracking systems. An MTA is still useful, even on a desktop systems. If you know you don't need it, feel free to uninstall it on your own system, but I don't think we can make that assumption for all desktop users.
