It would be nice to be able to do this in stuations where needed functionality is not compiled into the standard kernel-xen package. YaST provides this feature, when you install from CD, DVD, or ISO. Select one of those, then click the "Other Installation Source" radio button. There you can specify a kernel and initrd. (Or, if you prefer to do it manually in the config file, comment out the "bootloader" and "bootargs" lines, and add "kernel" and "ramdisk" lines instead.) I'm not sure about automating it further than that in Yast, because if it's not our standard kernel-xen package, there's no guarantee we can pull out the right file and create an appropriate initrd.
