This can be fixed simply by updating the Thunderbird icon and all references to it. I believe that placing a png icon in the "pixmaps" folder would be the most appropriate location. This "bug" is a minor aesthetic issue, but should be trivial to fix. I have attached a 128x128 pixel png file to this bug report for use as the suggested replacement icon.
