I know there is EFI partition from GRUB though....
The EFI partition should be a vfat filesystem mounted on /boot/efi. If, for some strange reason, your vfat filesystem starts at /boot, that would be the problem.
As for your 2nd question: "Does the file system on your boot partition support symlinks?"
I don't know how to check for this. Could you elaborate the instruction more?
Can you post the contents of /etc/fstab? In addition to Charles' request for `ls -l /boot`, this will help us better understand your partitioning layout and explain the issue.
