Right below the filesystem type selector there is a button labeled "Options..." that can be used to specify the mkfs options. But the options that can be configured in the corresponding pop-up dialog depend on the filesystem type that is selected and that dialog never includes a field to enter custom arbitrary options. Even worst for your case, there are no options to be configured for Btrfs (for historical reasons only ext2/3/4, XFS and FAT offer their own set of configurable options). It would really make sense to add the corresponding dialog for Btrfs including "csum" and likely other interesting options.
