The only documentation I can find is http://www.rpm.org/max-rpm-snapshot/s1-rpm-inside-files-list-directives.html and it says this about dash: "If a particular attribute does not need to be specified (usually because the file is installed with that attribute set properly), then that attribute may be replaced with a dash" (that's for %attr, not for %defattr, though). I'd expect this to work for %defattr too.
