Could it be that the system suffers from a half done usrmerge?
It seems so after the questionable software updates were published.
The setup is quite complex with lvm and multiple volumes so I suppose you can't just use the rescue image to mount your volumes?
I can mount all available partitions (on demand) with various (Live) systems here. (In reply to Ludwig Nussel from comment #14)

I am too unsure about this approach.
you may also try to run /usr/libexec/convertfs in the chroot manually
