Look up the "multiversion" option in /etc/zypp/zypp.conf, which asks zypper to leave the previous kernel(s) installed alongside the latest one, exactly to help with easy fall-back in case of a problem with a kernel update (like the one reported here bug). All this does is to leave you several kernel versions to choose from in GRUB.
