For that purpose it uses an xdg-settings script that's contained in the chromium package. That results in a file ~/.local/share/applications/defaults.list When Firefox is started it asks whether it should be set as default browser but uses different files. Firefox writes mimeapps.list. xdg-open apparently uses the latter.
