I finally decided to try installing the AlternateTab extension from extensions.gnome.org. It installed fine and works fine too. I would prefer if it would only list the applications on the current virtual desktops, as this is what I am used to, but even without that it is certainly better than the original behavior (for me, at least.) Oh, looking further on extensions.gnome.org, I found two other extensions modifying the behavior of Alt+Tab: https://extensions.gnome.org/extension/38/windows-alt-tab/ https://extensions.gnome.org/extension/97/coverflow-alt-tab/ I tested the first one and it does exactly what I need. So I'm going to use that from now on.
