My wild guess is that Xfce does not set any GTK+3 theme (logically, as Xfce uses GTK+2) and so GTK+3 applications, including YaST, fall back to the default, extra ugly and unreadable theme. If my hypothesis is correct, this might be worked around by installing Gnome3 temporarily and use its theme selector to pick a more usable theme. With some luck, this will get stored and used even outside of Gnome.
