I never could get Postfix to configure in my SuSe distro's but Sendmail worked immediately upon YAST install and configure. So I think it is back to doing what works for you and that will be different from me and others. The vote for ease of use and sanity retention would seem to go to Postfix by a large margin. At one time, Sendmail also had a lot of security issues but maybe those days are over. I stopped using it as soon as I could. There are other ones out there, of course. On a Debian system you'd get Exim as the default mailer.
