I'm not sure if I understand what you want.
Either try
  <runlevel>
    <default>3</default>
  </runlevel>
so you won't get X started up at the end of the installation.

Or try to pass textmode=1 to the linuxrc commandline before the installation 
starts. That forces yast to use the textmode instead of graphical.
