( mainly the HP versions, and possibly a lexmark as well. I didn't follow up on the hows and whys of them as there were none in my immediate future. from what I recall...as long as you get the PPD (postscript printer description file), you're all set to go. For CUPS, you add this file and now the CUPS print server can "see" all the features of the new combo printer device you have. Most good quality printers have Postscript drivers available for download from their vendors.
I only have one experience, and that's HP LaserJet 3200. The printer support for it is good, and the scanner part is even supportet through ptal, a bit tricky but usable. However, the fax portion, is as far as I know totally unsupported, and must therefore be used by hand on the device itself. Don't know much about others, but that one works adequately. I have a Canon MultiPASS C5500, and it took a while to just use it as a printer (I bought the printer BEFORE Linux). I finally had to network a Windows machine to regain the scanner , etc., use, though not in Linux. AFAIK, with a ppd CUPS would be able to print, but scanning may not work. I have an Epson Stylus CX5200 and it works great. Wonderful printing and scanning ( this model is only printer/scanner/copier - no fax). The only issue had to do with the Gimp and xsane. I had updated my Gimp installation and xsane needed the previous version. I just reinstalled Gimp from the DVD and everything works great. Darrell
