An ASCII password will still be converted to a 256 bit hash, no matter how many characters that are used. However, there are far more possible combinations of ASCII characters (96^63) than the 2^256 possible hash values. So, by using only hex digits, you're really not limiting much. BTW, there are 6.598^47 63 character ASCII passwords for each hash value.
