AFAIK, the only product which will actually save the form data along with the form is the Wintendo version of Acrobat Professional.

Want to write something? :p
If anybody is writing "something", he or she should have a look at pdftk. This can fill in forms and can save them. It is a command-line tool and not a viewer, though, and therefore no solution for Carlos' problem. But it is an application where one can get open-sourced code for that problem.
