I've searched the documentation, but I don't see any mention of the color coding. I'm absolutely certain it's intended to tell me something, but it's not intuitively obvious - at least to me.
It actually tells you in the 'Kind' column, assuming you have it. Red is for security, blue for recommended and black for optional.
I didn't make the connection between the "Kind" column and the color. That explains the colors in YOU. What do the colors mean in the "Install and Remove Software" section? I only see red and black there, but the ones that are red (like a ksteak) doesn't seem to have an special importance (although I could always be wrong).
Red means you have a version installed that is newer than the version on the original installation media. As an example, if you had the athlon linux kernel installed ("k_athlon") and its version from the original installation media was 2.4.21-99 and you updated it to the latest version of 2.4.21-192 through YOU, then went into "Install and Remove Software" in YaST and searched for "kernel" or "k_athlon," "k_athlon" would show in red and also list what version you have installed under the "Inst. Ver." column to the right of the "Avail. Ver." column.
