Something to consider: for complicated setups proftpd is a LOT easier to configure then wuftpd for example. Thus you are less likely to accidently make a directory world readable.writeable or whatever.
wuftpd ftpaccess files might be a little more complicated than apache-style proftpd files. But nevertheless: If your setup is fragile wrt complexity, then the complexity will be the primary source of problems. Always keep it simple and short. Roman.
