I am afraid, from this description it will be hard to track down the reason.
My guess would be either problems in the Linux-Kernel or X11 drivers.
What is interesting:
1) Are you doing anything when it hangs up?
2) What kind of System is this?
For this you can attach the output of
hwinfo --all
and
dmidecode
3) The other interesting (but tricky) part would be,
if you can capture kernel crash messages on a 2nd machine.
This can be done with a serial connection using a null-modem cable
and booting with console=ttyS0,115200 console=tty
kernel options and drop the "quiet" option
Use on the receiving machine: screen /dev/ttyS0 115200
or sending it over network with
modprobe netconsole netconsole=@YOURIP/eth0,6666@OTHERIP/OTHERMACADDR
and receiving it with netcat -l -u -p 6666
