Looks more like a general networking problem than an NFS problem.
I can see:
Feb 26 08:34:27 domu01 kernel: Initialising virtual ethernet driver.
and then
Feb 26 08:34:37 domu01 wickedd[426]: eth0: Notified neighbours about IP address
10.1.10.1
Feb 26 08:34:40 domu01 wicked[428]: eth0 up
so it appears that eth0 is configured as 10.1.10.1, but
Feb 26 08:34:49 domu01 kernel: nfs: server nas01.lan not responding, timed out
suggests that the server cannot be contacted, and
Booting to kernel 3.19, the guest is no longer accessible via network.
seems to confirm that. Has anything changed in the "Virtual ethernet driver"
between 3.18 and 3.19??
