Probably "GRUB_CRYPTODISK_ENABLE=y grub2-mkconfig -o /boot/grub2/grub.cfg" I could be wrong, but I encountered some problem if setting GRUB_CRYPTODISK_ENABLE=y in /etc/default/grub. Can't recall what exactly the problem is. And GRUB_CRYPTODISK_ENABLE seems to be environment variable to grub2-mkconfig by design .. as it affects grub-mkconfig_lib, unlike options in /etc/default/grub which mostly affects the scripts in /etc/grub.d/...
