The software you currently use is a PIM, meaning not only is it an email client, it also has calendaring, tasks, etc.
Thunderbird is just an email client. Kontact is just a contact manager.
Of the software you mention, Evolution would be the best suited for you. Being a die-hard Outlook user, if you ignore the limitations in Evolution (mainly no Exchange 2007 or 2010 support) I think Evolution is a great replacement for Outlook.
When I read everyone's response, and couple it with other emails in the list that I see, here is basically what I come up with: Thunderbird is great, has the fewest problems, though it does crash for some people. And it takes some tweaking to get used to it. Kmail is powerful and works well, but it has "gremlins" which are slow to resolve, and can make the whole system unusable, as mine has so far in my trial with not being able to connect to any IMAP server, and not issuing any error message to help with troubleshooting. Evolution would require me to switch to GNOME, and I am not yet prepared to do that. If I really need familiarity with Outlook style this is the one to go with, but I am not sure that is necessary at this point. Great to hear everyone's responses, and I will keep on working on this.
